So anyway, I think I ate more mushrooms from that paleo pizza than I've ever eaten in my combined life before this health change.
Recently my sister sent me a graphic of the average food that an American eats. It got me thinking. Here, take a gander at it:
415 pounds of vegetables? I'm guessing that in my average year I'd be closer to 4.15 pounds of vegetables. And to pick up that slack, I'd probably eat more like 80 pounds of corn syrup instead of the average 40. And pizza. I can only imagine how much pizza I eat in an average year. When Lisa and I lived in Baraboo, we would commonly go to a place called Pizza Ranch. It's a delightful pizza buffet place, and we frequented it as often as Lisa would let me. And my motto when it comes to buffets is that you don't just eat your money's worth...you eat so much that you wind up making money (although in truth, I got that motto from my friend Peter Curti).
The point is that my diet was lousy. Perhaps my only saving grace was that I didn't/don't drink soda all that often, and I don't consume any alcohol. So when I say I ate mushrooms, that's a huge accomplishment! I almost can't believe I'm still sticking to this plan!
